...I can't just put some random number of points in dexterity to raise AR a little...
There is nothing random about choosing the Dexterity according to the weapon you intend on using. I have personally opted to get Vitality 300 and with what I feel is enough Life, so I'll pump the rest of all my stats into Dexterity. This means that I have Dexterity 75 Currently without items.. I'm level 87, so that will be an ok boost.

..I either have to do enough for max block (bad idea) or none at all, and find other ways to solve AR. I don't like the Jah solution, as not working against bosses or champions is not good enough for me...
Jah doesn't work against bosses, which is why the Demon Limb on your switch is vital. Demon Limb or Angelic Combo. Either way you will get the same Attack Rating. 2 k I beleive. (I could be slightly wrong here but I'm pretty sure here). Personally I prefer to use Demon Limb, it's fast and easy. It lasts for close to 10 minutes. It cost 10k gold to repair per charge.. or Ort + chipped gem in the cube to recharge fully. It's a cheap solution to the AR problem and it works. While yes Angelic Rings and Amulet is a nice Combo.. then look at what you'll be loosing and gaining. So.
Removing Highlord + Raven + Carrion Wind and putting on Angelic Rings + Amulet :
Loose Cannot Be Frozen.
Loose 20 Dex
Loose 240 Attack Rating
Loose 55% Poison Resistance
Loose 9% Life Leech
Loose +1 skills
Loose 35% deadly strike
Loose 1-30 lightning damage (1-22 damage)
Loose 35% lightning resistance
Loose 15-45 Cold damage (11-33 damage)
Loose 20% Cold absorb
Gain 95 Life.
Gain 2 k Attack Rating
Gain 3 light radius (LOL)
Gain 10 Dex.
Take a look at this list and .. then ask yourself .. is it really worth it? In my book definatly not.

... How would it be if I got a Blessed Aim mercenary? Would the extra AR be enough to hit well against everything? I think it might well be. I can get an ethereal Doom weapon for him too, so he can also have Holy Freeze....
The Blessed Aim Merc will give you plenty of AR, you won't have to add/remove/change equipment, problem is.. what about when he dies? Then you're sold. Utterly sold. I tried it and found that having to run to town to revive Merc every other minute was a pain in the *beep*
The Merc is not a good solution, it is not a viable one simply cause when he's dead.. then so is your attack rating.
