Wait - you're saying, ES works differently in 1.07? How could I've missed that! Is the order damage/absorb/ES etc. takes place different from 1.11? If yes, do you know what the order is? Depending on the mechanism, one might want not to invest too heavily in vitality...I doubt blizz is safer than orb but yeah I'd recommend something like 20 static 20 blizz 5 cold mastery 1+ tele 1+ energy shield at the core of the build and the rest in some back up attack. Static, chain lightning, nova, firewall, orb, blizzard are I hear all viable damaging skills, don't know about hydra or fireball, etc.
I think es is something every 1.07 sorc should use. It lets you put points in energy for better energy regen, makes the best use of the rejuv bug as both mana and health goes down at the same time, effectively increases your max health considerably which helps prevent getting 1 hitted by hell meph, and if you have a 50% ES and wear nightsmoke then you'll basically take half damage with no downside. ES doesn't mean you can basically forget about res unlike in 1.11 though.
