I'd like your thoughts about two more characters. I want to make characters with the remaining four professions (Blacksmithing, Engineering, Alchemy, and Herbalism). Obviously Blacksmithing/Engineering together, and Alchemy/Herbalism together.

Now, I was considering either Shaman, Warlock, Rogue, or another Hunter as classes, with the possibilty of Druid or Paladin. I have a Night Elf Hunter (Leatherworking/Skinning), Human Mage (Enchanting/Tailoring), and a Draenei Warrior (Jewelcrafting/Mining).

Which two combinations of the remaining races would you sugggest for one of the other classes for the professions I still need?
 
For Blacksmithing you will need Metal Bars, you can only get metal via the mining skill. You mine ore, then smelt it into bars. The BS profession uses the bars (and some other to make weapons/armor. So for your specific situation, BS/Engineering is not a good idea.

Unless you are prepared to spend cash to buy bars, it's better to create three characters.

Herbalism goes well with Alchemy, Blacksmithing usually pairs with Mining.

I suggest one character to do Herbalism or Mining and Skinning. This will help generate money for you. A NE Rogue works best here because of the bonus to stealth ability. If your Hunter (I'm basing this answer off of not knowing what professions you have aside from Tailoring/Enchanting) already skins then consider both Herbalism and Mining on one character, this makes it easier to have Engineering and Blacksmithing on another character.

You cannot track both mining and herbalism nodes at the same time on the same character, but you can harvest both with no problem.

Usually pointless to have two of the same class on the same server, aside from bank alts or somethin.
suggested characters:

Rogue: Herbalism or Mining (because of stealth bonus) you can choose both if you want.
Paladin: Blacksmithing, Engineering as a first then some other profession
Shaman: Can be a gatherer, almost anything for the two professions, same for the others.
 
Seems I edited my post while you were typing. I've included the professions I have already. My warrior can make all sorts of bars from the ore he gathers already, which is why I was thinking of Blacksmithing and Engineering on one character.

I was thinking of shaman or warlock for the Alchemy/Herbalism, but couldn't decide between the two. You think rogue would be better?
 
Not better at the skill itself - Rogues can hide via stealth. With my Rogue in Duskwood, I do mining circuit runs around the zone, when there's a node close to a higher level monster I stealth and wait till it leaves. This comes in handy in higher leveled zones.

Rouge for Alch/Herb (use fishing too, as you will need certain fish for alchemy)

Then maybe Shammy or Lock for the other two.

If you want to make and sell stuff on a regular basis with BS, you won't be able to farm enough ore to make bars to make things with. And for BS, you will need more more than just metal bars to make things as you go higher into the skill.

You just will not have the time to farm up everything you need, nor will you always find enough active nodes. This is where the Gatherer and Auctioneer UI's come in ...big time.



 
the only way you could do it is if one of the professions was way behind the other one

so your current miner would have to have high JC, where he isnt using bronze anymore, then the copper and tin could go to another prof, etc. but it really isnt worth it

I went down this path before, really its best to just choose a main and give him the professions that would be most beneficial, because it can be really annoying lvling say, tailoring on your warlock, then decide you want to play the mage instead and she needs tailoring and you get to lvl tailoring again
