Uber Mephisto's Conviction aura is pretty wicked. Take your current resists and add -125 to them, that is what you'll be staring at when Meph turns you green in Tristram. There are 3 ways to get around that:
#1. Overstack your resists with items. Including the 3 Anya quests, the Hell difficulty penalty, and Meph's -125 Conviction aura you will need 270 to all your resists to maintain a 75 resist all. That can be tough to do and limit your gear choices.
#2. Run Salvation. While facing Meph using the Salvation aura can bolster your resist all. Level 10 offers +97 resists while level 20 offers +108 resist all. This gives you more gear flexibility but means you lose your Fanaticism aura until Meph is gone. Slowing down your Smite is survivable, but not preferred.
#3. Cancel Meph's Conviction. The highest Conviction aura is the only one that works. If your Conviction level is higher than Meph's, then yours overrides his and his has zero effect on you. Of the top of my head I don't know what level you need, for some reason I'm thinking level 21 or 25 does the trick but I can't remember.
Personally, I prefer #1 and keep "Uber gear" in my stash to only use when Ubering. This is all high resist gear so I can keep my Fanaticism on while smiting Meph. For example a 15/15'd Kira's replaces the Shako, tri-res boots replace the War Travelers, etc.
