how does +%ed jewels work on armor/helms/shields?

like say i put on a 40% ed ruby jewel on my helmet, how does it calculate on final damage?
 
It will get added to all your other off weapon %ed, so if you're using a skill like charge, it won't add much damage at all.
 
the basic formula is:
((A*B) +C) * D
where:
A = base weapon damage
B = on-weapon ED
C = +min or +max damage (also, the Damage + X mod from Grief and the like)
D = off-weapon ED

So, your jewels apply to D.

Skills like charge can get like 2000% off weapon ed, even if you have 120% ed on your helm, that 120% adds to 2000%, making it 2120%, which you will probably not even notice. If you're using a skill with lots of %ed, it's much better to using +min or +max jewels (though never +min/max and %ed on non-weapons, its bugged and will not work). For skills like zeal, you will notice a nice improvement in damage with a %ed jewel.

...would be that "off-weapon" includes not only ED from your other equipment pieces, but also ED from str/dex and skills/auras.

Example:
Lets say you have a sword with a base average damage of 34 (A = 34)
with +200% ED on it (B = 1+200/100 = 3)
and are using war travellers, with its 15-25 damage (C = 20).
You are a paladin running fanaticism (+373%) attacking with zeal (+336%).
You have 100 strength and are wearing fortitude (+300%)
for a total of +1109% off-weapon ED (D = 12.09).
Your average damage would be
( (34*3) + 20 ) * 12.09 = 1475.​
If you add a 40% ED jewel to your hat, that makes your off-weapon ED +1149% (D = 12.49)
for an average of
( (34*3) + 20 ) * 12.49 = 1524​
which is only a 3% improvement.

No, you won't receive all the bonuses. Only ever combine ed and +min/max on weapons, never off weapon.



 
If in doubt whether to increase on-weapon or off-weapon %ed, select the lower of the two. To consider +min/max dmg as well, calculate its effect on average damage and transform that into the appropriate amount of on-weapon %ed. However, you can simplify this to "always increase on-weapon %ed if you have the choice" because that's normally the higher of the two because of the massive bonuses from skills, stats, auras, non-weapon equipment and %ed to demons/undead. There are exceptions, like smite where on-weapon %ed doesn't have an effect at all.
