Minions is usually a term used for followers of a boss monster (i.e. "Pus Spitter the Mad"). People usually call them "animals", probably because they were also called like that in Diablo 1. It's just a "species" given to them so you don't have to say "the-monsters-who-are-neither-demon-or-undead".So that's why "animal" is sometimes not a good name for them. Nothing in the game do extra damage or anything else against these "animals".
Also, even if the game data files say some items do extra damage against "flying" and "large" creatures, and so on, this isn't true. Only the enhanced damages against special monster types as shown in game is actually used.
